Ingredients
  

Cookie Crust

  • 1 cup Biscoff cookies, crushed
  • 1/2 cup unsalted butter, melted

Brownie Batter

  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 cup Biscoff spread

Preparation

  • Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking pan.
  • In a medium bowl, combine the crushed Biscoff cookies with melted butter and mix until fully combined. Press mixture into the bottom of the prepared baking pan.

Making the Brownie Batter

  • In a large mixing bowl, whisk together sugar, eggs, and vanilla extract until smooth.
  • Gradually add all-purpose flour, cocoa powder, and salt, mixing until just combined.
  • Pour brownie batter over the cookie crust and spread evenly.
  • Drop spoonfuls of Biscoff spread onto the brownie batter and swirl gently with a knife or toothpick.

Baking

  • Bake in the preheated oven for about 25-30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
  • Remove from oven and let cool in the pan before cutting into squares.

Notes
