Ingredients
  

For the dough

  • 2.75 cups all-purpose flour Plus more for dusting
  • 1 packet active dry yeast (2 1/4 teaspoons) Make sure it's fresh
  • 1/4 cup granulated sugar For activating yeast
  • 1/2 teaspoon salt
  • 1/2 cup warm milk Around 110°F
  • 1/4 cup unsalted butter, melted
  • 1 large egg For dough enrichment

For the filling

  • 1/2 cup packed brown sugar
  • 2 tablespoons ground cinnamon
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons Biscoff cookie butter

For the topping

  • 1/2 cup Biscoff cookie butter, melted For drizzling
  • 4 to 5 pieces crushed Biscoff cookies For garnish

Instructions
 

Prepare the dough

  • Mix warm milk, granulated sugar, active dry yeast, and salt in a medium bowl and let sit for 5-10 minutes until frothy.
  • Add melted butter and the egg to the yeast mixture, stirring gently until combined.
  • Gradually stir in all-purpose flour until forming a soft, slightly sticky dough.
  • Knead the dough on a floured surface for 6-8 minutes until smooth and elastic.
  • Place dough in a greased bowl, cover with a kitchen towel, and let rise in a warm place until doubled in size, about 1 hour.

Prepare the filling

  • Mix brown sugar and ground cinnamon in a small bowl.

Shape the rolls

  • Punch down the risen dough and roll it into a rectangle on a floured surface.
  • Spread the dough with melted butter and Biscoff cookie butter, then sprinkle cinnamon mixture evenly.
  • Roll the rectangle into a log and cut into 8-10 pieces.
  • Place pieces in a greased baking dish, cut side up, and let rise for another 30 minutes.
  • Preheat the oven to 350°F (175°C).

Bake and serve

  • Bake rolls for 20-25 minutes until golden brown.
  • Drizzle warm melted Biscoff cookie butter over the rolls and sprinkle with crushed cookies before serving.
  • Serve warm, optionally with coffee, tea, or a dollop of whipped cream.
