Ingredients
  

  • 1/2 cup unsweetened almond milk
  • 1 cup mixed frozen blueberries
  • 1 small beet, peeled and diced (approximately 8 ounces)
  • 1/4 cup frozen pineapple
  • 1/4 cup plain nonfat Greek yogurt
  • 1-2 tsp honey (optional, or agave syrup for vegan)
  • as needed optional mix-ins: chia seeds, hemp seeds, ground flaxseed, or oatmeal

Instructions
 

  • Gather all your ingredients, ensuring the beet is peeled and diced.
  • Place almond milk, frozen blueberries, diced beet, frozen pineapple, and Greek yogurt into a high-speed blender.
  • Blend on high until smooth and creamy, about 1-2 minutes.
  • Taste and adjust sweetness with honey or agave syrup, blending again if necessary.
  • Serve immediately in a tall glass, optionally garnished with chia seeds or fresh fruit.
