  • 2 cups cottage cheese Use full-fat or low-fat based on preference.
  • 1 cup rolled oats
  • 2 large eggs
  • 1/4 cup maple syrup or honey Adjust to taste for sweetness.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon Can be adjusted to taste.
  • 1 cup fresh or frozen blueberries Ensure even distribution in the mixture.
  • 1/2 cup chopped nuts or seeds Optional for added texture.
  • 1 pinch salt

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the cottage cheese, rolled oats, eggs, maple syrup or honey, vanilla extract, baking powder, cinnamon, and salt. Mix well until everything is combined.
  • Gently fold in the blueberries and chopped nuts or seeds, if using.
  • Grease a baking dish with cooking spray or a little oil.
  • Pour the mixture into the prepared baking dish, spreading it out evenly.

Baking

  • Bake in the preheated oven for about 30-35 minutes, or until the top is lightly golden and the center is set.
  • Remove from the oven and let it cool for a few minutes before slicing and serving.

Notes
