Preparation

  • Wash the blueberries thoroughly and pat them dry with a paper towel.
  • In a blender or food processor, add the cottage cheese, honey or maple syrup, vanilla extract, lemon juice, and salt.
  • Blend the mixture until smooth and creamy, keeping some bits of cottage cheese for texture.
  • Gently fold in the fresh blueberries to keep them intact.

Churning

  • Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions, typically for about 20-30 minutes.
  • Transfer the churned ice cream to an airtight container.
  • Freeze the ice cream for at least 2 hours to firm up before serving.
