Ingredients
  

Pancake Batter

  • 1 cup cottage cheese
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries Do not thaw frozen blueberries before use.

Preparation

  • In a large mixing bowl, whisk together the cottage cheese, eggs, milk, and vanilla extract until well combined.
  • In another bowl, mix the all-purpose flour, baking powder, sugar, and salt together.
  • Slowly add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix; a few lumps are perfectly fine.
  • Gently fold in the blueberries, being cautious not to break them.

Cooking

  • Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or oil.
  • Spoon about one tablespoon of the batter for each pancake bite onto the heated skillet. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  • Repeat until all batter is used, adjusting the heat as needed to prevent burning.

Serving

  • Serve warm, either plain or with your favorite toppings like Greek yogurt, honey, or maple syrup.

Notes
