  • 1 teaspoon vanilla extract
  • 1 medium lemon (zest) Use zest for added flavor.
  • 1 medium lemon (juice)
  • 1 cup fresh or frozen blueberries Add frozen blueberries directly into the mix.
  • a pinch salt Enhances flavor.

Optional Toppings

  • sliced almonds For crunch.
  • chia seeds Adds nutritional value.
  • extra blueberries For garnish.

Preparation

  • In a mixing bowl, combine the rolled oats, milk, Greek yogurt, maple syrup, vanilla extract, lemon zest, lemon juice, and salt. Stir well to combine all the ingredients thoroughly.
  • Gently fold in the blueberries, ensuring they are evenly distributed throughout the mixture.
  • Divide the mixture into individual jars or containers with lids. This will make it easy to grab a serving in the morning.
  • Cover the jars and refrigerate them for at least 4 hours, preferably overnight, to let the oats soak and soften.

Serving

  • In the morning, give the oats a good stir, adding a splash more milk if you like a thinner consistency.
  • Top your oats with your choice of toppings like sliced almonds, chia seeds, or extra blueberries.

Notes

Store blueberry lemon overnight oats in the fridge for up to five days. You might need to add more milk if they become too thick. Layer the ingredients with oats at the bottom and blueberries on top for better texture.
