Ingredients

For the Bourbon Glaze

  • 1/2 cup bourbon
  • 2 tablespoons pure maple syrup
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon low sodium soy sauce
  • 1 clove minced garlic
  • 1/2 teaspoon apple cider vinegar

For the Salmon

  • 2 pounds side of salmon (skin-on preferred)
  • 3/4 teaspoon kosher salt for seasoning
  • 1/2 teaspoon ground black pepper for seasoning
  • Chopped green onions optional for serving

Instructions

Prepare the Glaze

  • In a medium saucepan, combine the bourbon, maple syrup, brown sugar, Worcestershire sauce, soy sauce, minced garlic, and apple cider vinegar. Stir and bring to a boil over medium-high heat. Once boiling, reduce heat and let it simmer for 3 to 5 minutes until slightly thickened, then remove from heat.

Prepare the Salmon

  • Preheat your oven to 375°F (190°C). Line a baking dish with parchment paper and foil.
  • Let the salmon sit at room temperature for about 15 minutes, then season it with kosher salt and ground black pepper.
  • Brush the glaze generously over the salmon, ensuring an even coating.

Bake the Salmon

  • Fold the foil around the salmon to create a sealed packet and place it in the oven. Bake for 15 to 18 minutes until almost cooked through.
  • After baking, open the foil, switch the oven to broil, and broil the salmon for an additional 3 to 4 minutes until the glaze is crispy and the salmon reaches 145°F (63°C).

Serve

  • Remove the salmon from the oven and let it rest for a few minutes. Garnish with chopped green onions if desired and serve.
