Main Ingredients

  • 4 large sweet potatoes Firm with smooth skin for the best texture.
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter, melted
  • 1/4 cup bourbon Can be substituted with apple cider.
  • 1/2 cup milk Almond milk can be used for a nutty flavor.
  • 2 large eggs Can be replaced with flax eggs for a vegan option.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • to taste Salt

Optional Toppings

  • 1 cup mini marshmallows Optional.
  • 1/2 cup chopped pecans Optional, can be toasted for added flavor.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Peel and dice the sweet potatoes into small chunks.
  • Place them in a large pot of boiling water and cook until tender, about 15-20 minutes. Drain and let cool.
  • In a mixing bowl, mash the cooked sweet potatoes until smooth.
  • Add brown sugar, melted butter, bourbon, milk, eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix until well combined.
  • Transfer the sweet potato mixture to a greased baking dish and spread evenly.
  • Optionally, sprinkle mini marshmallows and chopped pecans over the top.

Baking

  • Bake in the preheated oven for 30-35 minutes, until the top is golden and slightly crispy.
  • Remove from the oven and let cool for a few minutes before serving.

Notes

Serve warm, pairs beautifully with roasted chicken or grilled vegetables. Can be made ahead and stored in the fridge before baking. Leftovers can be reheated in the microwave or oven.
