lightly chopped (about 3 ounces)
Grated Parmesan cheese

Instructions
Preheat your oven to 375°F (190°C).
In a baking dish, combine cherry tomatoes, garlic cloves, Italian seasoning, salt, pepper, and olive oil. Toss to coat.
Make space in the middle and place Boursin and cream cheese there. Bake for 30 to 35 minutes until tomatoes burst and garlic is tender.
While baking, cook pasta according to package directions until al dente. Reserve ¾ cup pasta water before draining.
Once baking is done, mash tomatoes and garlic into a sauce. Stir in lemon juice and spinach, allowing spinach to wilt.
Add ½ cup reserved pasta water to sauce, then pour in drained pasta and toss to coat. Add more water if needed.
Taste and adjust seasoning with salt, pepper, and lemon juice as needed.
Serve topped with grated Parmesan and chopped parsley.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove.
