  • 4 pieces chicken thighs, skinless and bone-in Use good quality chicken for better flavor.
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup diced tomatoes, canned or fresh
  • 1 tablespoon tomato paste
  • 1 tablespoon capers, rinsed and drained
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Preparation

  • Heat the olive oil in a large, heavy-bottomed pot over medium heat.
  • Season the chicken thighs with salt and pepper. Brown the chicken on both sides, about 5 minutes per side. Remove the chicken from the pot and set aside.
  • In the same pot, add the diced onion and cook until soft, around 5 minutes. Stir in the minced garlic and cook for an additional minute.
  • Add the diced tomatoes, chicken broth, tomato paste, capers, lemon juice, oregano, and thyme to the pot. Stir to combine fully.

Cooking

  • Return the browned chicken thighs to the pot, nestling them into the sauce.
  • Bring the mixture to a gentle boil, then reduce the heat to low. Cover and let the chicken braise for 30-40 minutes until the chicken is cooked through and tender.
  • Stir occasionally, adjusting seasoning if needed.
  • Before serving, sprinkle fresh parsley on top.

Notes
