Instructions
Break the eggs into a bowl, and add salt and turmeric powder. Mix in the chopped onions, green chilies, coriander leaves, and water. Whisk until combined.
Heat one teaspoon of butter in a pan over medium heat. Pour in the egg mixture and swirl the pan to spread it evenly.
Before the egg sets, place two slices of bread on top, pressing gently. Flip the bread to coat the other side with the egg mixture.
Sprinkle black pepper over the top and cook for about 30 seconds.
Carefully flip the entire omelet and bread combo, folding any excess omelet towards the center. Add the remaining butter to the pan.
Toast the sandwich for another minute until golden and crisp. Optionally, spread mayonnaise on the inside before folding.
Remove from the pan, cut into triangles, and garnish with extra coriander or chilies if desired. Serve hot.
