whole milk
warmed to 110°F

sliced and at room temperature

Instructions
Combine warmed milk, honey, and yeast in a bowl. Let sit for about 5 minutes until foamy.
Mix a quarter of the sponge with 1 cup of bread flour to form a thick mixture. Cover and let rise for 30 minutes.
In a stand mixer, combine the sponge with eggs, sugar, and salt. Add 2 cups of bread flour, mixing well.
Add another 2 cups of bread flour and switch to the dough hook. Gradually mix in the butter, kneading for about 10 minutes until smooth and elastic.
Grease a large bowl, place the dough inside, and cover. Let rise for about 1 hour, until doubled in size.
Punch down the dough, divide into two portions. Cut one portion into eight sections and shape into balls.
Place dough balls into greased loaf pans, cover, and let rise for 30-45 minutes.
Preheat the oven to 375°F. Prepare an egg wash by whisking egg yolk and water. Brush on top of the loaves.
Bake for 30-35 minutes until golden brown. Cool in pans for 15 minutes, then transfer to a wire rack to cool completely.
