Brioche Bread

Ingredients
  

  • 1 cup whole milk warmed to 110°F
  • ¼ cup honey
  • 1 tablespoon active dry yeast
  • 1 cup bread flour
  • 8 large eggs at room temperature
  • ½ cup granulated sugar
  • 2 teaspoons kosher salt
  • 6-6½ cups bread flour more as needed
  • 1 cup unsalted butter sliced and at room temperature
  • 1 large egg yolk
  • 1 tablespoon water

Instructions
 

  • Combine warmed milk, honey, and yeast in a bowl. Let sit for about 5 minutes until foamy.
  • Mix a quarter of the sponge with 1 cup of bread flour to form a thick mixture. Cover and let rise for 30 minutes.
  • In a stand mixer, combine the sponge with eggs, sugar, and salt. Add 2 cups of bread flour, mixing well.
  • Add another 2 cups of bread flour and switch to the dough hook. Gradually mix in the butter, kneading for about 10 minutes until smooth and elastic.
  • Grease a large bowl, place the dough inside, and cover. Let rise for about 1 hour, until doubled in size.
  • Punch down the dough, divide into two portions. Cut one portion into eight sections and shape into balls.
  • Place dough balls into greased loaf pans, cover, and let rise for 30-45 minutes.
  • Preheat the oven to 375°F. Prepare an egg wash by whisking egg yolk and water. Brush on top of the loaves.
  • Bake for 30-35 minutes until golden brown. Cool in pans for 15 minutes, then transfer to a wire rack to cool completely.
