  • 1/2 cup onion, chopped Adds depth to the soup.
  • 2 cloves garlic, minced Provides aromatic flavor.
  • 4 cups vegetable broth Ensure it's gluten-free if needed.
  • 1 cup heavy cream Can be substituted with dairy-free options for a lighter version.
  • 2 tablespoons butter Used for sautéing.
  • to taste Salt and pepper Adjust based on personal preference.

Instructions
 

Preparation

  • Melt 2 tablespoons of butter in a large pot over medium heat.
  • Add the chopped onion and minced garlic; cook until soft and translucent, about 3-5 minutes.

Cooking

  • Add 2 cups of broccoli florets and 4 cups of vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes until the broccoli is tender.
  • Use an immersion blender to blend the soup until smooth; alternatively, pour into a regular blender in batches.
  • Return soup to stove, stir in 1 cup of heavy cream and shredded cheddar cheese, and let the cheese melt completely while stirring.
  • Season with salt and pepper to taste and allow to simmer for a few more minutes.
