Ingredients
  

For the Patties

  • 2 cups fresh broccoli florets, chopped finely
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 2 cloves garlic, minced
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 teaspoon onion powder
  • 1/2 teaspoon chili flakes (optional) Add for a spicy kick
  • to taste Oil for frying Use enough oil to cover the bottom of the frying pan

Preparation

  • Blanch the chopped broccoli in boiling water for about 2 minutes until tender but still bright green. Drain and pat dry to remove excess moisture.
  • In a large bowl, mix the blanched broccoli, shredded cheese, breadcrumbs, Parmesan cheese, minced garlic, black pepper, salt, onion powder, and chili flakes. Stir well to combine.
  • Beat the eggs in a separate bowl and add them to the broccoli mixture. Mix until everything is evenly coated.
  • Form the mixture into small patties, about the size of your palm.

Cooking

  • Heat oil in a frying pan over medium heat. Once hot, place the patties in the pan, leaving space between each one.
  • Fry for about 4 to 5 minutes on each side until they turn golden brown. Remove the patties and place them on a paper towel to absorb any excess oil.
  • Serve warm and enjoy!

Notes

Make sure to drain the broccoli well to prevent sogginess. Bake option: you can bake the patties at 375°F for about 20 minutes, flipping them halfway through.
