  • 6 large large eggs Fresh eggs for best flavor.
  • 1 cup fresh broccoli florets, chopped Use fresh broccoli for optimal taste.
  • 1 cup shredded cheese (cheddar or mozzarella) Good quality cheese that melts well.
  • 1 small onion, diced
  • 2 cloves garlic, minced Enhances flavor.
  • 1/2 teaspoon salt Adjust according to taste.
  • 1/4 teaspoon black pepper Freshly ground is best.
  • 2 tablespoons olive oil For sautéing.

  • Fresh herbs like parsley or thyme Optional, for garnish.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, whisk together the eggs, salt, and black pepper until well combined. Set aside.

Cooking

  • Heat olive oil in an oven-safe skillet over medium heat. Add the diced onion and cook until it becomes soft and translucent, about 3-4 minutes.
  • Add the minced garlic to the skillet and sauté for an additional minute until fragrant.
  • Toss in the chopped broccoli and stir-fry for about 4-5 minutes until it turns bright green and tender-crisp.
  • Pour the egg mixture over the sautéed vegetables in the skillet. Make sure the ingredients are evenly distributed.
  • Sprinkle the shredded cheese on top of the egg mixture.
  • Cook on the stovetop for 5 minutes, lifting the edges occasionally to allow the uncooked eggs to flow underneath.
  • Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata puffs up and the eggs are completely set.
  • Remove from the oven and let it cool for a few minutes before slicing. Garnish with fresh herbs if desired.

Notes

Serve sliced into wedges for individual plates, or cut into smaller squares for a crowd. Pairs well with salads, crusty bread, or dipping sauces.
