  • 1/2 cup unsalted butter browned
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 large very ripe bananas mashed
  • 1 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon Diamond Crystal kosher salt

Instructions
 

  • Preheat your oven to 375°F (190°C). Line a loaf pan with parchment paper or grease well.
  • Melt the butter in a small saucepan over medium heat. Cook until it foams and turns golden brown, about 3–5 minutes. Stir frequently. Remove from heat and let cool slightly.
  • In a large mixing bowl, whisk the browned butter and sugar together until well combined.
  • Add eggs one at a time, mixing well after each. Stir in vanilla extract.
  • Fold in the mashed bananas until evenly incorporated.
  • In a separate bowl, whisk together flour, baking powder, and kosher salt.
  • Gently mix the dry ingredients into the wet ingredients until just combined. Do not overmix.
  • Pour batter into the prepared loaf pan and smooth the top.
  • Bake for 50–55 minutes, or until a toothpick inserted in the center comes out clean or with moist crumbs.
  • Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Use very ripe bananas for the best flavor. Don’t overmix the batter to keep the loaf tender. Try adding chocolate chips or walnuts for variety!
