  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 tablespoons matcha powder Choose high-quality culinary-grade matcha.
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup white chocolate chips Optional for added sweetness.

Preparation

  • Begin by browning the butter. In a medium saucepan, melt the butter over medium heat, stirring continuously to prevent burning.
  • Once the butter foams and turns golden brown with a nutty aroma, remove it from heat and let it cool slightly.
  • In a large mixing bowl, combine the brown sugar and granulated sugar. Pour the warm browned butter over the sugars and whisk until combined.
  • Add the eggs one at a time, mixing well after each addition, then incorporate the vanilla extract.
  • In another bowl, sift together the all-purpose flour, matcha powder, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients until just combined.
  • If using white chocolate chips, fold them into the cookie dough.
  • Chill the dough for at least 30 minutes in the refrigerator.

Baking

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about two inches apart.
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
