Rub each chicken piece with olive oil. Sprinkle evenly with Italian seasoning, garlic powder, salt, and pepper.
Heat a skillet over medium-high heat. Add the chicken breasts and sear for 6–7 minutes on each side until the internal temperature reaches 165°F (74°C).
Transfer the cooked chicken to a plate and let it rest for 10 minutes.
In a mixing bowl, combine diced tomatoes, red onion, minced garlic, chopped basil, balsamic vinegar, olive oil, salt, and pepper. Stir gently and let sit for at least 10 minutes.
Spoon a generous amount of the bruschetta topping over each chicken breast.
Optional: Sprinkle with shaved parmesan and drizzle balsamic glaze.
