Ingredients
  

Chicken

  • 4 pieces boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon garlic powder
  • to taste salt and black pepper

Bruschetta Topping

  • 4 medium ripe tomatoes diced
  • 2 tablespoons red onion finely chopped
  • 1 clove garlic minced
  • 2 tablespoons fresh basil finely chopped
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • to taste salt and pepper

Optional Garnish

  • to taste shaved parmesan cheese
  • to drizzle balsamic glaze
  • to garnish extra chopped basil

Instructions
 

  • Pat the chicken breasts dry with a paper towel.
  • Rub each chicken piece with olive oil. Sprinkle evenly with Italian seasoning, garlic powder, salt, and pepper.
  • Heat a skillet over medium-high heat. Add the chicken breasts and sear for 6–7 minutes on each side until the internal temperature reaches 165°F (74°C).
  • Transfer the cooked chicken to a plate and let it rest for 10 minutes.
  • In a mixing bowl, combine diced tomatoes, red onion, minced garlic, chopped basil, balsamic vinegar, olive oil, salt, and pepper. Stir gently and let sit for at least 10 minutes.
  • Spoon a generous amount of the bruschetta topping over each chicken breast.
  • Optional: Sprinkle with shaved parmesan and drizzle balsamic glaze.
  • Serve immediately while the chicken is warm.
