  • 1 lb chicken breast, cooked and shredded Shredded chicken can be replaced with rotisserie chicken for convenience.
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup chicken broth
  • 1 cup cream cheese For a creamier texture, increase cream cheese.
  • 1/2 cup buffalo sauce Adjust according to heat preference.
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • to taste Salt and pepper Season according to preference.
  • to garnish Chopped green onions
  • to garnish Shredded cheese Use your choice of cheese.

Preparation

  • Heat a large pot over medium heat and add diced onion and minced garlic. Sauté for about 3 to 4 minutes until soft and fragrant.
  • Stir in shredded chicken, followed by white beans and diced tomatoes. Mix well.
  • Pour in chicken broth and buffalo sauce, then sprinkle cumin on top. Stir to combine and bring to a gentle simmer.
  • Reduce heat and add cream cheese, stirring continuously until melted and integrated into the chili.
  • Season with salt and pepper to taste.
  • Ladle the chili into bowls and garnish with chopped green onions and shredded cheese before serving.

Notes

For variations, consider adding diced jalapeños for extra heat or use chickpeas for a vegetarian version. This chili can be adapted for a slow cooker.
