  • 2 cups cooked shredded chicken Rotisserie chicken can save time.
  • 1/2 cup buffalo sauce Adjust the amount for desired spiciness.
  • 1 cup cooked quinoa Cook according to package instructions.
  • 1 cup chopped celery Adds crunch.
  • 1 cup shredded carrots For added texture.
  • 1/2 cup blue cheese or ranch dressing Optional, choose based on preference.
  • 1 tablespoon olive oil Use to enhance flavor while roasting.
  • Salt and pepper to taste
  • Fresh parsley for garnish Optional for final presentation.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash and pierce the sweet potatoes with a fork. Place them on a baking sheet and bake for 45-60 minutes, or until fork-tender.
  • While the sweet potatoes are baking, cook the quinoa according to package instructions.

Cooking

  • In a pan over medium heat, combine shredded chicken and buffalo sauce. Stir until the chicken is evenly coated and heated through.
  • Once the sweet potatoes are done, let them cool for a few minutes. Then, slice them open and fluff the insides with a fork.

Assembly

  • In serving bowls, layer the sweet potato, quinoa, buffalo chicken, chopped celery, and shredded carrots.
  • Drizzle with blue cheese or ranch dressing if desired, and season with salt and pepper to taste.
  • Garnish with fresh parsley, if using. Serve immediately and enjoy.
