  • 1 medium butternut squash, peeled and cubed (about 4 cups) Select fresh butternut squash for the best flavor.
  • 3 pieces firm apples, cored and sliced A mix of sweet and tart apples is recommended for best flavor.
  • 3 tablespoons butter (or coconut oil for dairy-free) Use coconut oil for a dairy-free option.
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon maple syrup (optional) Add for extra sweetness if desired.
  • 1 pinch salt
  • 1 pinch pepper

Preparation

  • Preheat your oven to 375°F (190°C).
  • Grease a 9x13-inch baking dish to prevent sticking.
  • Melt the butter or coconut oil in a small pan or in the microwave.
  • In a large bowl, combine the peeled and cubed butternut squash with the sliced apples.
  • Drizzle the melted butter over the squash and apple mix, then sprinkle in the cinnamon, nutmeg, and a pinch of salt and pepper.
  • Toss the mixture gently until every piece is evenly coated.
  • If desired, add maple syrup to the mixture.

Baking

  • Pour the fruit and vegetable mixture into the prepared baking dish and spread it out evenly.
  • Bake in the preheated oven for 40 to 45 minutes, stirring halfway through for even cooking.
  • The dish is done when it is bubbly and fork-tender.
  • Allow to cool slightly before serving.
