  • 4 cups cooked chicken, shredded or chopped
  • 1 cup sour cream
  • 1 can cream of chicken soup (10.5 ounces)
  • 1 cup melted butter
  • 1 cup crushed buttery crackers
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper
  • 1 tablespoon fresh parsley, chopped (optional)

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the shredded chicken, sour cream, cream of chicken soup, garlic powder, onion powder, salt, and pepper. Mix until well blended.
  • Spread the chicken mixture evenly in a greased 9x13-inch baking dish.
  • In another bowl, mix the melted butter with the crushed crackers. Stir until the crackers are evenly coated.
  • Spread the cracker mixture over the top of the chicken mixture in the baking dish.
  • Sprinkle the shredded cheddar cheese evenly on top of the cracker layer.
  • Bake in the preheated oven for 30-35 minutes, or until the casserole is bubbly and the top is golden brown.
  • If desired, garnish with fresh parsley before serving.

Notes

For the best results, use freshly cooked or rotisserie chicken. Consider adding vegetables like broccoli or spinach for extra nutrition. You can also swap the cheddar cheese for mozzarella or pepper jack for a different flavor.
