Ingredients
  

Vegetables

  • 1 medium head of cabbage, chopped Look for firm heads with vibrant leaves.
  • 4 medium potatoes, diced Starchy potatoes yield creamier texture.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced

Liquids

  • 4 cups vegetable broth Can substitute with chicken broth if desired.
  • 2 tablespoons olive oil

Seasoning

  • Salt and pepper to taste Adjust to personal preference.
  • Optional herbs (thyme or bay leaf) Adds additional flavor.

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and minced garlic; sauté for about 3-5 minutes until the onion is soft.
  • Introduce the chopped cabbage and diced potatoes to the pot; mix well.
  • Pour in the vegetable broth and bring to a gentle boil.

Cooking

  • Reduce heat to low and let the soup simmer for 20-30 minutes or until the potatoes are tender.
  • Season with salt and pepper; add optional herbs at this stage.

Serving

  • Ladle the soup into bowls, including both vegetables and broth.
  • Garnish with chopped herbs if desired and serve hot.
