Ingredients
  

  • 2 Tbsp olive oil
  • 1 medium onion, diced
  • 1 large carrot, diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp salt
  • 1/2 cabbage chopped
  • 1 can (14 oz) diced tomatoes
  • 4 to 6 cups vegetable broth
  • 1 to 2 Tbsp lemon juice
  • 1/4 cup roughly chopped fresh parsley
  • to taste cracked black pepper

Instructions
 

  • Heat the olive oil in a large pot over medium-high heat.
  • Add the diced onion, carrot, and celery. Cook for 4-5 minutes until tender and fragrant.
  • Add the minced garlic, oregano, basil, and salt. Stir for another minute.
  • Incorporate the chopped cabbage and let it sweat for about 5 minutes.
  • Pour in the vegetable broth and diced tomatoes. Simmer uncovered for 10 minutes.
  • Remove from heat, stir in lemon juice and parsley, and season with cracked black pepper to taste.
