Instructions
Heat the olive oil in a large pot over medium-high heat.
Add the diced onion, carrot, and celery. Cook for 4-5 minutes until tender and fragrant.
Add the minced garlic, oregano, basil, and salt. Stir for another minute.
Incorporate the chopped cabbage and let it sweat for about 5 minutes.
Pour in the vegetable broth and diced tomatoes. Simmer uncovered for 10 minutes.
Remove from heat, stir in lemon juice and parsley, and season with cracked black pepper to taste.
