Ingredients
  

For the sauce

  • 1.5 cups chicken broth
  • 0.75 cups heavy cream (or half-and-half)
  • 1 tablespoon honey
  • 2 teaspoons hot sauce
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon brown sugar
  • 0.5 teaspoon mustard powder
  • 0.5 teaspoon oregano
  • 1 pinch cayenne pepper
  • 1 pinch red pepper flakes
  • 1 tablespoon lime juice

For the chicken

  • 2 large boneless skinless chicken breasts Sliced in half lengthwise
  • 1.5 teaspoons Cajun seasoning Additional for seasoning
  • 3 tablespoons flour For coating the chicken
  • 2 tablespoons olive oil (or avocado oil) For cooking
  • 3 tablespoons butter
  • 3 cloves garlic (minced)
  • 1 can Rotel diced tomatoes with green chilies (10 oz.) Juice reserved
  • 0.75 cups cheddar jack cheese (shredded) For sauce
  • 2 lime wedges lime wedges For serving
  • 1/4 cup fresh cilantro (roughly chopped) For garnish

Instructions
 

Preparation

  • Begin by preparing the diced tomatoes. Drain them carefully and set aside the juice for later use.
  • In a large measuring cup, combine all the sauce ingredients: chicken broth, heavy cream, honey, hot sauce, Cajun seasoning, brown sugar, mustard powder, oregano, cayenne pepper, and red pepper flakes.
  • Slice chicken breasts in half lengthwise, cover, and pound gently to about 1/2 inch thick. Sprinkle Cajun seasoning on both sides and coat lightly with flour.

Cooking

  • Heat oil in a skillet over medium-high heat and sear the chicken pieces in batches for 4-5 minutes per side until golden brown. Set aside.
  • Pour reserved tomato juice into the skillet, scrape up the brown bits, add butter and minced garlic, and sauté for 1 minute.
  • Add remaining flour and cook for another 2 minutes, stirring constantly.
  • Gradually add the sauce mixture, bring to a boil, and reduce heat. Incorporate drained tomatoes and let simmer for 5-7 minutes.
  • Lower heat and stir in shredded cheddar jack cheese until melted. Add lime juice.
  • Return chicken to skillet, spoon sauce over it, and let simmer for 4 minutes.
  • Add lime wedges and simmer for 1 minute to infuse flavors.

Serving

  • Garnish with chopped cilantro and serve alongside rice, beans, or salad.

Notes

For an extra flavor boost, consider marinating the chicken in Cajun seasoning, olive oil, and lime juice for 30 minutes before cooking. Adjust the spiciness of the dish to your preference.
