  • 2 pieces chicken breasts Fresh, boneless chicken breasts
  • 2 tablespoons Cajun seasoning Adjust according to spice tolerance
  • 2 tablespoons olive oil For cooking
  • 1 cup bell peppers (sliced) Use any color bell peppers
  • 1 cup onion (sliced) Medium yellow onion works well
  • 2 cloves garlic (minced) Fresh minced garlic for flavor
  • 1 cup chicken broth Low sodium recommended
  • 1/2 cup heavy cream For a rich and creamy sauce
  • to taste Salt and pepper
  • to taste Fresh parsley (for garnish) Chopped for serving

Instructions
 

Preparation

  • Season the chicken breasts with Cajun seasoning, salt, and pepper.
  • Heat olive oil in a skillet over medium heat.
  • Sear the seasoned chicken breasts for 5 to 7 minutes on each side until golden-brown.
  • Remove the chicken from the skillet and let it rest.

Cooking

  • In the same skillet, add sliced bell peppers, onion, and minced garlic.
  • Sauté until softened and fragrant, about 3 to 5 minutes.
  • Add chicken broth and heavy cream, stirring to combine.
  • Return the chicken to the skillet, cover, and simmer for about 10 minutes.

Serving

  • Plate the Cajun Chicken over rice or pasta, and garnish with sautéed vegetables.
  • Drizzle with extra creamy sauce and sprinkle with fresh parsley.
