  • 1 pound boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper diced (red or yellow)
  • 2 cups chicken broth
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • to taste Salt and pepper
  • 2 tablespoons olive oil
  • 2 tablespoons chopped green onions (for garnish)
  • to taste Fresh parsley, chopped (for garnish)

Instructions
 

Preparation

  • Cut the chicken breasts into bite-sized pieces and season generously with Cajun seasoning, smoked paprika, salt, and pepper.
  • Heat olive oil in a large skillet over medium heat.
  • Add the seasoned chicken to the skillet and cook for about five minutes until browned on all sides.
  • Remove the chicken from the skillet and set aside.
  • In the same skillet, add chopped onion, minced garlic, and diced bell pepper and sauté for 3 to 4 minutes until tender.
  • Stir in the orzo, making sure it's well coated with the vegetable mixture.
  • Pour in the chicken broth and bring to a boil.
  • Add the cooked chicken back into the skillet and stir to combine.
  • Lower the heat and let it simmer for about 10 to 12 minutes, stirring occasionally, until the orzo is al dente.
  • Adjust seasoning as needed before serving.

Serving

  • Garnish the Cajun Chicken Orzo with chopped green onions and fresh parsley before serving.
