Instructions
 

Preparation

  • Rinse and sort through the dried red beans, removing any stones.
  • Soak the beans overnight in water.

Cooking

  • Drain the soaked beans and transfer them to a crockpot.
  • Add the chopped onion, green bell pepper, celery, and minced garlic.
  • Slice the smoked sausage and add it to the crockpot.
  • Sprinkle in the Cajun seasoning and pour in the chicken broth.
  • Season with salt and pepper to taste, and stir to combine.
  • Set the crockpot to low and cook for about 8 hours, checking for bean tenderness about an hour before serving.
  • Once the beans are soft, gently stir in the cooked rice.

Serving

  • Ladle the Cajun Red Beans and Rice into bowls.
  • Garnish with sliced green onions.

Notes
