Ingredients
  

Main Ingredients

  • 1 pound large shrimp, peeled and deveined Fresh, wild-caught shrimp preferred.
  • 1 pound smoked sausage, sliced High-quality smoked sausage for best flavor.
  • 2 pieces bell peppers, chopped Any colors of bell peppers.
  • 1 medium red onion, chopped Can substitute with yellow or white onion.
  • 2 cups corn (fresh or frozen) If using frozen, no need to thaw.

Seasoning and Oil

  • 3 tablespoons olive oil
  • 2 tablespoons Cajun seasoning Adjust to spice tolerance.
  • 1 teaspoon garlic powder
  • to taste Salt and pepper Add according to preference.
  • to taste Fresh parsley, chopped (for garnish) Add after cooking for freshness.

Instructions
 

Preparation

  • Preheat your grill to medium-high heat or your oven to 400°F (200°C).
  • Cut large pieces of aluminum foil and lay them flat.
  • In a mixing bowl, combine the shrimp, sausage, bell peppers, onion, and corn.
  • Drizzle the olive oil over the mixture and sprinkle the Cajun seasoning and garlic powder. Season with salt and pepper. Toss everything until well-coated.
  • Distribute the mixture evenly among the foil pieces, placing it in the center of each sheet.
  • Fold the foil edges over the ingredients, creating a packet. Make sure it is sealed tightly to keep the steam in.

Cooking

  • If using a grill, place the packets on the grill and cook for about 15-20 minutes or until the shrimp turn pink and the sausage is heated through.
  • If baking, place the packets on a baking sheet and cook for the same time.

Serving

  • Carefully open the packets, allowing steam to escape. Garnish with fresh parsley and serve hot.
