  • 1 box lemon cake mix
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1/2 cup powdered sugar (for rolling) Optional: extra lemon zest for garnish

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the lemon cake mix, vegetable oil, eggs, vanilla extract, and lemon zest. Stir until well blended to form a thick dough.
  • Chill the dough in the refrigerator for about 30 minutes to make rolling easier and improve cookie texture.

Baking

  • Once chilled, remove the dough from the fridge. Use a cookie scoop or your hands to form small balls about 1 inch in diameter.
  • Roll each ball in powdered sugar until generously coated. Place them on the prepared baking sheet, spacing about 2 inches apart.
  • Bake in the preheated oven for 10-12 minutes. The cookies should look slightly underbaked in the center.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  • Dust with additional powdered sugar before serving, if desired.
