Ingredients
  

For the Caramelized Onions

  • 5 large large onions, thinly sliced Use yellow, sweet, or red onions for different flavors.
  • 3 tablespoons olive oil For sautéing the onions.
  • to taste Salt Helps to draw out moisture from the onions.
  • to taste Black pepper For seasoning.

For the Sauce

  • 180 grams vegan cream cheese (or regular cream cheese) Choose based on dietary preferences.
  • 50 grams vegan parmesan cheese (or regular parmesan cheese) Substitute as needed.
  • 1/2 cup pasta water Reserved from cooked pasta to adjust sauce consistency.

For the Pasta

  • 400 grams cooked pasta Any pasta of your choice.
  • Fresh parsley, chopped For garnishing.
  • to taste Chili oil For drizzling on top before serving.

Instructions
 

Caramelize Onions

  • Heat olive oil in a large pan over medium-low heat.
  • Add sliced onions along with a pinch of salt.
  • Stir occasionally for 30 to 40 minutes, until onions are golden brown.

Prepare Sauce

  • Transfer caramelized onions to a mixing bowl.
  • Add cream cheese and parmesan cheese; season with black pepper.
  • Pour in reserved pasta water and stir to combine until creamy.

Combine Pasta and Sauce

  • Return the sauce to the pan over low heat and add cooked pasta.
  • Toss gently until pasta is well-coated and heated through.

Serve

  • Plate the pasta and garnish with chopped parsley and drizzle with chili oil.

Notes

For best flavor, use high-quality cheese. Leftovers can be stored in an airtight container in the refrigerator for up to three days.
