Preparation

  • Heat 2 tablespoons of olive oil in a large pot over medium heat.
  • Add the chopped onion and minced garlic, sautéing for 3 to 5 minutes until soft and translucent.
  • Stir in the grated ginger and cook for an additional minute.
  • Add the chopped carrots and vegetable broth, bringing the mixture to a boil.
  • Reduce heat and let it simmer for approximately 20 minutes until the carrots are tender.

Blending

  • Use a blender or immersion blender to puree the soup until smooth and creamy.
  • If using a traditional blender, allow the soup to cool slightly before blending for safety.
  • Stir in the coconut milk and season with salt and pepper to taste.

Serving

  • Ladle the soup into bowls and garnish with a drizzle of coconut milk, fresh herbs, or toppings like roasted pumpkin seeds or croutons.
