  • 4 cups vegetable broth

Preparation

  • Start by gathering your chopped carrots, diced potatoes, chopped onion, and minced garlic.
  • Heat the olive oil in a large pot over medium heat.

Cooking the Soup

  • Add the chopped onion and minced garlic to the pot and sauté for about 3-5 minutes until the onion turns translucent.
  • Stir in the chopped carrots and diced potatoes, cooking for an additional 3-4 minutes.
  • Pour in the vegetable broth, ensuring all vegetables are submerged. Bring to a boil for 2-3 minutes.
  • Reduce the heat and let it simmer for about 20-25 minutes until the vegetables are tender.
  • Blend the soup using an immersion blender until creamy or transfer in batches to a regular blender.
  • Return the blended soup to low heat and season with salt and pepper.

Serving

  • Ladle the creamy soup into bowls and garnish with fresh herbs if desired. Serve hot.

Notes

For thicker soup, add more vegetable broth if desired. It’s great served with crusty bread.
