Ingredients

cup
chopped carrots (steamed and cooled)

fresh or frozen bananas
1/2

plain Greek yogurt
1/2
cup
unsweetened vanilla cashew milk (or milk of your choice)
1/4
cup
frozen diced pineapple

Tbsp
toasted walnuts

Tbsp
flaked coconut (optional)
1/4

ground cinnamon
a pinch
nutmeg
Shredded carrots, coconut, or crushed walnuts
(for topping, optional)
Instructions
Chop the carrots into smaller pieces if using fresh carrots. If using a regular blender, steam them until tender.
In a blender, combine the chopped carrots, frozen bananas, Greek yogurt, and milk.
Add the frozen pineapple, toasted walnuts, flaked coconut (if using), ground cinnamon, and nutmeg.
Blend until smooth and creamy, adjusting the consistency with more milk if needed.
Pour into a glass and top with shredded carrots, coconut, or crushed walnuts if desired.
