Ingredients
  

  • 1 cup chopped carrots (steamed and cooled)
  • 2 large fresh or frozen bananas
  • 1/2 cup plain Greek yogurt
  • 1/2 cup unsweetened vanilla cashew milk (or milk of your choice)
  • 1/4 cup frozen diced pineapple
  • 2 Tbsp toasted walnuts
  • 1 Tbsp flaked coconut (optional)
  • 1/4 tsp ground cinnamon
  • a pinch nutmeg
  • Shredded carrots, coconut, or crushed walnuts (for topping, optional)

Instructions
 

  • Chop the carrots into smaller pieces if using fresh carrots. If using a regular blender, steam them until tender.
  • In a blender, combine the chopped carrots, frozen bananas, Greek yogurt, and milk.
  • Add the frozen pineapple, toasted walnuts, flaked coconut (if using), ground cinnamon, and nutmeg.
  • Blend until smooth and creamy, adjusting the consistency with more milk if needed.
  • Pour into a glass and top with shredded carrots, coconut, or crushed walnuts if desired.
