- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 cup unsalted butter, softened Ensure butter is softened, not melted.
- 1 cup buttermilk Use room temperature.
- 4 large eggs Use room temperature.
- 1 tablespoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup chopped nuts (optional) Use your choice of nuts.
- 1 cup shredded coconut (optional)
Instructions
Preparation
- Preheat your oven to 350°F (175°C) and grease and flour a 9x13-inch baking pan.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
- In another bowl, combine the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon.
- Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Mix until just combined.
- If desired, fold in the chopped nuts and shredded coconut at this point.
- Pour the batter into the prepared baking pan, spreading it evenly.
Baking
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
Cooling
- Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
