  • 1 large head cauliflower, chopped into florets Fresh and high-quality for best flavor.
  • 2 pieces leeks, sliced Should be cleaned thoroughly.
  • 1 piece onion, diced Yellow or white onion works well.
  • 2 cloves garlic, minced Adds depth of flavor.
  • 4 cups vegetable broth Can be low sodium if preferred.
  • 2 tablespoons olive oil For sautéing.
  • 1 teaspoon dried thyme Enhances flavor.
  • to taste salt and pepper Adjust to preference.
  • 1 piece potato, peeled and chopped (optional) For added creaminess.
  • to taste fresh parsley for garnish Adds freshness.

Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onion and cook until soft and translucent, about 5 minutes.
  • Stir in the sliced leeks and minced garlic, cooking for another 5 minutes until fragrant.
  • If using, add the chopped potato and stir well.
  • Add the cauliflower florets and dried thyme. Season with salt and pepper.
  • Pour in the vegetable broth, stir and bring to a boil.
  • Once boiling, reduce heat and let simmer for about 20 minutes, or until all vegetables are tender.
  • Use an immersion blender to puree the soup until smooth or blend in batches in a regular blender.
  • Taste and adjust seasoning if necessary, then serve immediately.
