Cookie Ingredients

  • 1 cup brown butter Make brown butter by melting and cooking until golden brown.
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs Use room temperature eggs for better mixing.
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour Can substitute with gluten-free flour blend.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon chai spice mix A mixture of cinnamon, cardamom, ginger, and cloves.
  • 1/2 cup chai sugar (for rolling)

Instructions
 

Preparation

  • Preheat oven to 350°F (175°C).
  • Brown the butter in a saucepan over medium heat until golden and nutty. Allow to cool slightly.
  • In a large mixing bowl, combine the browned butter, granulated sugar, and brown sugar, mixing until smooth.
  • Add eggs and vanilla extract, whisking until well blended.
  • In a separate bowl, mix flour, baking soda, salt, and chai spice mix.
  • Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.

Baking

  • Roll the dough into small balls and coat them in chai sugar.
  • Place on a lined baking sheet, spacing to allow for spreading.
  • Bake for 10-12 minutes, until the edges are golden and centers are soft.
  • Cool on baking sheet for a few minutes before transferring to a wire rack.

Serving

  • Serve warm, optionally drizzled with melted chocolate or alongside ice cream.
  • Pair with chai, cocoa, or herbal tea for an enhanced experience.
