Ingredients
  

For the Cheesecake Filling

  • 8 oz cream cheese, softened Ensure it is softened to room temperature
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract

For the Cookie Dough

  • 1 cup unsalted butter, softened Use 2 sticks of butter
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups chocolate chips Semi-sweet or dark chocolate chips can be used

Instructions
 

Preparation of Cheesecake Filling

  • Mix the softened cream cheese, powdered sugar, and vanilla extract in a bowl until smooth and creamy.
  • Scoop out portions and place on a parchment-lined tray, then freeze for about 20-30 minutes.

Making the Cookie Dough

  • Beat the softened butter with brown sugar and granulated sugar until fluffy and light in color.
  • Add in the eggs and vanilla extract, mixing until well combined and creamy.

Combining Dry Ingredients

  • In a separate bowl, whisk together flour, baking soda, and salt.
  • Gradually mix the dry ingredients into the wet mixture until just combined.

Folding in Chocolate Chips

  • Gently fold in the chocolate chips until evenly distributed.

Chilling the Dough

  • Cover the bowl with plastic wrap and chill the dough in the refrigerator for about 15-20 minutes.

Baking the Cookies

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  • Take about 1.5 tablespoons of dough, flatten it, place a frozen cheesecake ball in the center, and mold the dough around it.
  • Bake the cookies for 13-15 minutes or until the edges are golden brown and the centers are soft.

Cooling and Serving

  • Allow cookies to cool slightly on the baking sheet before transferring to a wire rack.
  • Serve warm and consider pairing with ice cream for an indulgent treat.
