  • 1 medium bell pepper, diced
  • 2 cups chicken broth
  • 1 cup heavy cream For a creamier dish, can add cream cheese or mascarpone.
  • 1 cup shredded cheddar cheese Can substitute with mozzarella or pepper jack.
  • 1 tablespoon Cajun seasoning Adjust quantity for desired spiciness.
  • to taste Salt and pepper
  • for garnish Fresh parsley, chopped Adds fresh flavor and brightens the dish.

Preparation

  • Cook the rotini pasta according to the package instructions until al dente. Drain and set aside.
  • Heat the olive oil in a large skillet over medium heat. Add the diced onion and bell pepper, and sauté for about 3-4 minutes until softened.
  • Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  • Increase the heat to medium-high and add the chicken pieces to the skillet. Season with Cajun seasoning, salt, and pepper. Cook for about 5-7 minutes, stirring frequently, until the chicken is fully cooked and browned.
  • Pour in the chicken broth and heavy cream. Bring the mixture to a simmer and allow it to thicken slightly for about 3-5 minutes.
  • Stir in the cooked rotini and shredded cheddar cheese, mixing until the cheese has melted and the pasta is coated in the creamy sauce.
  • Taste and adjust seasoning if necessary.
  • Garnish with freshly chopped parsley before serving.
