  • 3 tablespoons extra virgin olive oil
  • 2 cups diced carrots
  • 1 cup diced celery
  • 1 cup chopped white onion
  • 1 tablespoon fresh minced garlic
  • 2 cups chicken broth
  • 1.5 cups white rice
  • 1 teaspoon kosher salt
  • 0.5 teaspoon freshly ground black pepper
  • 0.25 teaspoon smoked paprika
  • 0.25 teaspoon garlic salt
  • 0.25 teaspoon red pepper flakes
  • 2 cups cooked diced chicken
  • 0.5 cup fresh chopped parsley
  • 1 cup shredded cheddar cheese

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Add carrots, celery, onions, and garlic. Sauté for 5 minutes, stirring frequently.
  • Pour in chicken broth and stir in white rice. Mix well.
  • Cover and cook for about 15 minutes or until rice is tender and liquid is absorbed.
  • Season with salt, pepper, smoked paprika, garlic salt, and red pepper flakes. Stir gently to combine.
  • Add diced cooked chicken and chopped parsley. Stir until evenly distributed.
  • Top with shredded cheddar cheese, cover, and let it melt for a few minutes.
  • Serve hot and enjoy!

Notes

Use rotisserie chicken to save time. Add vegetables like peas or bell peppers for extra nutrition. Top with crispy onions or sour cream for added texture and flavor.
