This comforting casserole combines tender chicken, vibrant broccoli, and creamy cheese, all melded together with fluffy rice for a satisfying family meal.
1 1/4cupslong-grain white rice, rinsed and uncooked
2 1/2cupschicken broth for cooking the rice
1cupchicken broth for the casserole mixture
2cupsshredded chicken, cooked
2cupsbroccoli florets, fresh and cut into bite-sized pieces
3cupssharp cheddar cheese, divided
10.5ozcan cream of chicken soup
1teaspoongarlic powder
1teaspoonsalt
1/2teaspoonblack pepper
1cupRitz crackers, crushed
2tablespoonsbutter, melted
Instructions
In a large saucepan, combine the uncooked rice with 2 1/2 cups of chicken broth. Bring to a boil, then cover and reduce heat to low. Simmer for 18-20 minutes until the rice is tender. Fluff with a fork and set aside.
Preheat your oven to 350°F (175°C).
In the same pot, add cooked chicken, broccoli, 1 cup of chicken broth, cream of chicken soup, garlic powder, salt, black pepper, and 1 1/2 cups of cheese. Mix well.
Spread the chicken mixture evenly in a 9x13-inch baking dish. Sprinkle the remaining 1 1/2 cups of cheese on top.
In a small bowl, combine crushed Ritz crackers with melted butter. Sprinkle the mixture over the cheese layer.
Bake for 30-35 minutes until heated through, cheese is melted, and topping is golden brown.
Let cool for about 10 minutes before serving.
