Cheesy Chicken Broccoli Rice Casserole

Ingredients
  

  • 1 1/4 cups long-grain white rice, rinsed and uncooked
  • 2 1/2 cups chicken broth for cooking the rice
  • 1 cup chicken broth for the casserole mixture
  • 2 cups shredded chicken, cooked
  • 2 cups broccoli florets, fresh and cut into bite-sized pieces
  • 3 cups sharp cheddar cheese, divided
  • 10.5 oz can cream of chicken soup
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup Ritz crackers, crushed
  • 2 tablespoons butter, melted

Instructions
 

  • In a large saucepan, combine the uncooked rice with 2 1/2 cups of chicken broth. Bring to a boil, then cover and reduce heat to low. Simmer for 18-20 minutes until the rice is tender. Fluff with a fork and set aside.
  • Preheat your oven to 350°F (175°C).
  • In the same pot, add cooked chicken, broccoli, 1 cup of chicken broth, cream of chicken soup, garlic powder, salt, black pepper, and 1 1/2 cups of cheese. Mix well.
  • Spread the chicken mixture evenly in a 9x13-inch baking dish. Sprinkle the remaining 1 1/2 cups of cheese on top.
  • In a small bowl, combine crushed Ritz crackers with melted butter. Sprinkle the mixture over the cheese layer.
  • Bake for 30-35 minutes until heated through, cheese is melted, and topping is golden brown.
  • Let cool for about 10 minutes before serving.
