Cheesy One-Pot Chicken Alfredo Pasta

Ingredients
  

For the pasta

  • 8 ounces fettuccine pasta

For the chicken

  • 1 pound chicken breast, diced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 4 cups chicken broth

For the sauce

  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions
 

Cooking the Chicken

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced chicken to the pot. Season it with salt and pepper to taste.
  • Sauté the chicken until it turns golden brown and is cooked through, about 5-7 minutes. Remove the chicken and set it aside.

Preparing the Pasta

  • In the same pot, add minced garlic and sauté until fragrant, about 1 minute.
  • Pour in the chicken broth and bring it to a boil.
  • Add the fettuccine pasta and Italian seasoning. Reduce heat to a simmer and cook according to the package instructions, stirring occasionally.
  • Once the pasta is cooked, lower the heat and stir in the heavy cream and grated Parmesan cheese.
  • Add the cooked chicken back into the pot and mix everything well.
  • Cook for an additional 2-3 minutes until everything is heated through and the sauce thickens slightly.
  • Taste and adjust the seasoning if needed, then remove from heat. Serve hot with fresh parsley on top if desired.
