Main ingredients

  • 4 cups frozen hash browns
  • 1 none onion, diced
  • 4 cups chicken or vegetable broth
  • 1 can cream of chicken soup or cream of mushroom
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup heavy cream or milk
  • to taste none Salt and pepper
  • optional none Chives or green onions for garnish

Instructions
 

Preparation

  • Gather your slow cooker and add the frozen hash browns and diced onion.
  • Pour in the chicken or vegetable broth and mix in the cream of chicken soup.
  • Stir all the ingredients well to combine.

Cooking

  • Cover your slow cooker and set it to cook on low for 6-8 hours or on high for 3-4 hours.
  • About 30 minutes before serving, stir in the shredded cheese and heavy cream or milk.
  • Season with salt and pepper to taste before serving.

Serving

  • Ladle the soup into deep bowls and garnish with chopped fresh chives or sliced green onions.
  • Serve with crusty bread or a light side salad.

Notes

This soup can be made vegetarian or gluten-free by substituting the cream of chicken soup. It stores well for leftovers for 3-4 days in the fridge and can be frozen for up to 3 months.
