  • 1 pound ground beef Use lean beef to reduce grease.
  • 24 ounces fresh cheese tortellini Feel free to use frozen tortellini if needed.
  • 2 packets taco seasoning Choose your preferred spice level.
  • 1.75 cups beef broth Low-sodium if preferred.
  • 2 tablespoons sour cream For creamier texture.
  • 16 ounces queso dip Can substitute with other cheese dips.

Preparation

  • Heat a large skillet over medium-high heat.
  • Add ground beef and cook until browned, about 5-7 minutes. Drain excess fat.
  • Sprinkle in taco seasoning and stir well to coat the beef.
  • Pour in beef broth and mix to combine.
  • Add fresh cheese tortellini and gently mix to ensure it is submerged in the broth. Bring to a simmer.
  • Cook for about 10 minutes, stirring occasionally, until the tortellini is tender.
  • Lower the heat and fold in sour cream and queso dip. Stir until well combined.

Serving

  • Serve hot, garnished with chopped cilantro or green onions if desired.
