  • 1 cup maraschino cherries, drained Chopped and dried on paper towels
  • 113 g unsalted butter (1 stick / ½ cup / 4oz) Melted and cooled
  • 225 g plain flour (all-purpose flour) (1 ¾ cups / 8oz) Whisked with baking soda and salt
  • ¾ teaspoon baking soda For leavening
  • ½ teaspoon salt To enhance flavor
  • cup white granulated sugar (135g / 4.8oz) Combined with brown sugar
  • ¼ cup light brown sugar (50g / 1.8oz) Adds moisture and flavor
  • 1 large egg Room temperature
  • 2 teaspoons vanilla extract For flavor
  • 1 cup dark chocolate chips (semi-sweet) (180g / 6.4oz) Folded into the dough

Instructions
 

Preparation

  • Preheat your oven to 180°C (350°F) and line two large baking sheets with baking paper.
  • Chop the drained maraschino cherries into small pieces and dry them on paper towels.
  • Melt the unsalted butter in a saucepan over low to medium heat until it turns amber brown, then let it cool to room temperature.
  • In a separate bowl, whisk together the plain flour, baking soda, and salt.

Mixing

  • In a large mixing bowl, combine the cooled butter with white granulated sugar and light brown sugar until smooth.
  • Add the egg and vanilla extract, whisking until incorporated.
  • Fold the dry ingredients into the wet mixture until just combined.
  • Gently fold in the chopped cherries and dark chocolate chips until evenly distributed.

Baking

  • Scoop out the dough onto your prepared baking sheets, leaving space between each scoop.
  • Press some extra chocolate chips and cherries onto the tops of the dough if desired.
  • Bake in the preheated oven for 12 to 14 minutes until golden around the edges and slightly soft in the center.
  • Let the cookies cool on the sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

Ensure butter is cooled properly to avoid flat cookies. For added texture, consider adding nuts or varying the type of chocolate used. Dough may be chilled before baking for thickness.
