Ingredients
  

  • 1/2 cup old fashioned oats
  • 1/2 cup dairy-free milk almond, coconut, or oat milk
  • 1/2 cup frozen sweet pitted cherries
  • 1 tablespoon almond butter
  • 1 tablespoon ground flaxseed
  • 1-2 teaspoons maple syrup
  • 1/2 tablespoon fresh lemon juice optional
  • 1/8 teaspoon almond extract optional
  • toppings dairy-free yogurt, vegan chocolate chips, cocoa nibs, sliced almonds

Instructions
 

  • Thaw frozen cherries in the refrigerator overnight or microwave, then let cool.
  • In a bowl, gently mash the thawed cherries with a fork, keeping some chunks for texture.
  • In a mason jar, combine oats, dairy-free milk, almond butter, flaxseed, maple syrup, lemon juice, and the mashed cherries.
  • Stir well until everything is mixed and the oats are coated.
  • Cover and refrigerate for at least 2 hours or overnight.
  • Serve with your choice of toppings like dairy-free yogurt, chocolate chips, or sliced almonds.
