  • 1/3 cup olive oil
  • 1 small onion peeled and finely diced
  • Kosher salt to taste
  • 2 cloves garlic peeled and minced
  • 1/2 teaspoon crushed red pepper
  • 22 ounces cherry tomatoes halved
  • 1 pound spaghetti or pasta of choice
  • 2 tablespoons unsalted butter
  • 1 handful basil leaves roughly chopped

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add the diced onion and a pinch of salt. Cover and cook for 7 minutes until tender.
  • Add minced garlic and crushed red pepper. Cook for 1 minute until fragrant.
  • Stir in halved cherry tomatoes. Cover and cook for 5 minutes, then uncover and simmer for 5–7 more minutes until tomatoes soften and release their juices.
  • Meanwhile, cook spaghetti in salted boiling water until al dente. Reserve 3/4 cup of pasta water before draining.
  • Add drained pasta to the tomato sauce with 1/2 cup reserved pasta water and butter. Stir over medium heat for 1 minute until the sauce coats the pasta.
  • Top with chopped basil before serving. Enjoy!
