  • 1/4 cup molasses

  • 1 teaspoon vanilla extract

Additional

  • Extra sugar for rolling (optional)

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the all-purpose flour, baking soda, salt, ground ginger, ground cinnamon, and ground cloves.
  • In a separate bowl, cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
  • Add the molasses, egg, and vanilla extract to the butter mixture and beat until fully incorporated.
  • Gradually add the flour mixture to the wet ingredients, stirring gently until a cohesive dough forms.

Baking

  • Roll small amounts of dough into balls and roll them in sugar if desired.
  • Place them on a parchment-lined baking sheet, leaving space between each.
  • Bake in the preheated oven for about 8-10 minutes, until edges are set but centers are soft.
  • Let cookies cool on the baking sheet for a few moments before transferring them to a wire rack to cool completely.

Store cookies in an airtight container at room temperature. Chill dough if too soft for easier handling. Experiment with spices and add-ins for various flavors.
