  • 1 cup rolled oats Use rolled oats for the best texture.
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix the rolled oats, granulated sugar, brown sugar, flour, baking soda, and salt together. Stir until well combined.
  • In a separate bowl, whisk together the melted butter, eggs, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry ingredients and mix until everything is well combined. The dough will be slightly sticky.
  • Using a tablespoon, drop rounds of cookie dough onto the prepared baking sheet, leaving space between each one as they will spread while baking.

Baking

  • Bake for 10-12 minutes until the edges are golden brown. Keep an eye on them to prevent burning.
  • Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes
